Alcoholic fermentations are initiated in our stainless steel tanks, barrels, and demi-muids. Stainless steel currently represents the majority of our vinification vessels and is an integral part of the house’s wine style.
Malolactic fermentations are systematically carried out. Our Chardonnays are naturally fresh, and we appreciate the richness and generosity brought by this bacterial fermentation.

The Unisson – Grand Cru – Blanc de Blancs cuvée is a blend. After 4 to 5 years of aging on lees, a balanced, indulgent, and creamy profile develops in our Chardonnays, underpinned by the distinctive saline backbone of the Côte des Blancs.

Alongside the use of stainless steel containers, we vinify and age some wines in 228L barrels and 600L demi-muids. This approach is employed to craft base wines for our tirage and dosage liqueurs, as well as to store a portion of our reserve wines, enhancing their depth.
Our goal for these wines, added during the tirage and disgorgement phases, is to bring exceptional complexity and quality to the final cuvées.
The temporal dimension is essential to crafting refined and complex Blanc de Blancs. Tailored to the characteristics of each blend and wine, the aging period on lees traditionally ranges from 2 to 8 years, allowing the cuvées in our range to fully express their potential.

The trilogy of Pur Avize, Pur Oger, and Pur Mesnil highlights the unique characteristics of three villages where our vineyards are located. For each village, we selected specific parcels that, in our view, best represent the essence of the cru.
This approach reflects our deep understanding of these villages. Through this trilogy, we also aim to showcase the diversity of the Côte des Blancs terroir, which is often underestimated. For the second fermentation and aging on lees, we opted for cork closures to enhance the wine’s expression.
